Description Together with sugars and fats, protein is one of the basic, essential nutrients – an irreplaceable part of human nutrition. It is quantitatively the third most important component of mature breast milk, a position it shares with prebiotic fibre. The content and composition of protein in breast milk ensure its optimal digestibility and use for the growing child’s needs. Increasing attention is therefore being devoted to the amount and composition of protein in artificial infant formulas made from cow’s milk.
